I really don’t have much to say about this healthy apple cake. In the words of Gordon Ramsey, it’s “f***** delicious”. I don’t know if there were enough stars to bleep that bad bad word.

Other than being delicious this cake is also a great use of old apples. If you’re like me, you’d always buy apples and never eat them. You know that saying…

An apple a day…

Then you almost bite a piece off and ”Oh, look it’s rotting”.

Or you’ll have a toddler who wants that apple and then just abandons it after one bite like it’s an old snot-filled tissue.

But you’re not gonna throw that apple away. No, no. you have to save it, to save the environment and because people somewhere might want to eat an apple, but they don’t have any.

So you slice those old apples, cut the bad parts out, and save the good ones for rainy days. Except, you don’t keep them, but decide to make them into pancakes, cookies, apple pie or this cake. Yes, this easy apple cake is a great option.

Apple Breakfast Cake Ingredients

Well, the surprising ingredient list goes like this:

  • Apples
  • Oats
  • Honey
  • Cinnamon
  • Yogurt
  • Eggs
  • Butter or coconut oil

And some other non-significant additions that make this cake complete.

How To Make Breakfast Apple Cake

It’s pretty easy if you have a hand blender. It might also work in a blender too. You add all the ingredients into a bowl or a blender and process them until smooth. Add some more oats in the end.

You can top the cake with more oats or even thin apple slices for decoration before baking. Last time I also added some apple chunks to the batter.

Once the batter is ready spread it in a smaller baking pan. Bake at 180C / 350F for around 20-30 minutes and then wait until the apple cake has cooled off.

Then you slice it and keep those slices in an airtight container in the fridge until they’re needed…I’m sure it will be soon enough.

Meal Prep Option

So this simple apple cake would be a great meal prep breakfast recipe. Or dessert recipe. Believe it or not, it’s like wine, cheese and buildings – it gets better with age. Well, I guess that’s actually true for some buildings.

I tried it after 3 days – soooooo good, like way better than the first day.

This healthy breakfast oatmeal apple cake is a tasty and easy meal prep recipe that you can make for the entire week. The healthy apple cake is also great for dessert and is kid-friendly.

Ingredients

  • 1 cup oats
  • 1 large apple, peeled and chopped
  • 3 Tbsp honey*
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tbsp yogurt
  • 2 eggs
  • 1 Tbsp butter or coconut oil

Instructions

  1. Preheat the oven to 180C/350F.
  2. Put all ingredients in a blender or in a bowl to process with a hand blender, but use only 3/4 of the oats. Process until smooth and then mix in the 1/4 of the oats.
  3. Line a smaller sized baking pan with parchement paper and pour the mixture inside.
  4. Bake for 20-30 minutes or until a toothpick comes out clean.
  5. After baking let the cake cool off, slice, put the slices in an airtight container in the fridge for at least an hour. The cake gets better the longer it’s cooled. Enjoy for breakfast or dessert.

Notes

*Since I ran out of honey and maple syrup, last time I used about 3-4 tbsp of dark brown sugar and it was delicious! Make sure to have a quick taste test to know whether the cake is sweet enough for you. I also used a smaller baking pan - that's what you see in the pictures.
