Sweet Chili Cucumbers and Onions ~ Fresh garden cucumbers and red onion mixed in an Asian-inspired vinaigrette of rice vinegar and sweet chili sauce. Two garden fresh cucumbers screamed out at me to use them. A red onion followed suit. They begged, I complied, and created one of my most favorite concoctions to date. This was so simple, extremely quick, but packed a wallop of flavor.

I was making grilled chicken with some Asian flavors and had some jasmine rice I wanted to use up. The cucumbers and onion just worked themselves into this wonderful dish. Sweet, tangy, and tiny bit of heat. If a dish can be refreshing, this one was refreshing. To be perfectly honest, I would be more than content to just eat this salad (?) straight from the bowl, all on its own. It was that good. Tomorrow I will share the chicken recipe with you and the dish fully assembled. But since these cucs and onions were so good solo, I felt they deserved their own post.

Oh and with the left over salad, I did just eat it on my own. And then I made it again when I made a traditional Vietnamese dish, Mint and GingerChicken. This might be one of my new favorite dishes when I have left over cucumbers from the summer bounty. It comes together so incredibly fast, that I just can’t go wrong. I know you will love this Sweet Chili Cucumber and Onion salad.

Oh yes!! I’ve had a version of this made with all rice vinegar, but I’m loving the chili sauce in here. And I love that you don’t have added sugar. Making it!!!
