Ingredients

  • 1 small onion, finely chopped
  • 2 small red onion, finely chopped
  • 2 cloves of garlic, crushed
  • 1 carrot, chopped
  • 1 leek, washed, trimmed and sliced thinly
  • 1 small courgette (zucchini,) diced
  • 300g (10.5oz) butternut squash, peel and diced small
  • ¾ cup (150g) of pearl barley, dried
  • 2 tablespoons of tomato paste
  • 6 cups (1.42 litres) of chicken or vegetable stock
  • 1 teaspoon of paprika
  • 1 teaspoon of ground cumin
  • 2 teaspoons of dried parsley
  • 1 teaspoon of dried basil
  • salt and black pepper
  • low calorie cooking spray (I used olive oil)

Instructions

INSTANT POT

  1. Set Instant Pot to saute mode
  2. Add onion, garlic, carrot and leeks and fry to soften.
  3. Add the butternut, tomato paste, paprika, cumin, parsley and basil and stir to coat.
  4. Add all other ingredients
  5. Set to 20 mins manual (high pressure)
  6. Close valve
  7. Once cooked do a quick pressure release
  8. Taste and season as needed with salt and black pepper
  9. Enjoy!!

STOVE TOP

  1. Heat a deep pot over medium-high heat and spray with cooking oil spray
  2. Add the onions, garlic, carrots and leek and fry to soften
  3. Add the butternut, tomato paste, paprika, cumin, parsley and basil and stir to coat.
  4. Add all other ingredient
  5. Stir, bring to a boil, then reduce heat, cover and simmer for 40 minutes, Add more. stock if needed.
  6. Taste and season as needed with salt and black pepper
  7. Enjoy!!
